150 g butter –
1/4 cup sugar
1 tsp Vanilla essence
1 nip salt
160 g Creme Fraiche or buttermilk
1 1/4 cups flour (a minimum of half of this needs to be white flour and the other half can be almond or corn flour)
1 1/2 tsp baking powder
Heat up the oven to 180 celsius
Mix butter and sugar for quite a long time, then add Vanilla essence, salt and eggs one at a time.
Gently mix in the Creme Fraiche or buttermilk and add flour(s) and baking powder.
Bake the muffins between 20-30 mins until they are lightly brown.
Add 1 Tsp almond essence and some half frozen raspberries
with Icing (after baking) made of cream cheese, icing sugar, and a little juice from raspberries.
Variation 02: (add to main recipe)
Chopped dark chocolate, a banana, a handful chopped walnuts
with Icing (after baking) double cream, melted chocolate, and a walnut on the top.
Variation 03: (add to main recipe)
Fine chopped apple mixed with cinnamon-sugar.
